A Roman-style pizza shop where slices are cut with scissors and sold by weight opened at 22 E. Chicago Ave. in downtown Naperville on Wednesday, Aug. 26.

Bonci Pizza's new storefront is the brand's first location outside Chicago and its fourth in the United States. Bonci USA owner Chakib Touhami is hosting a grand opening celebration Friday, Aug. 28, at 4 p.m. with a DJ and free pizza for the first 20 customers.

The concept works differently than a typical pizzeria. Customers choose from multiple varieties on display, tell the server how much they want, and the slice is cut with scissors and weighed to set the price. It's finished in the oven and cut into small bites for sharing.

"We went to Rome. You don't have to go to Rome. You just come here," Touhami told NCTV17. "So I took care of the tickets, the airplane, the hassle, and all of that, and I brought Rome to you."

The menu changes frequently, sometimes daily, depending on locally sourced ingredients. Seasonal specialties include a peach pizza with ricotta and smoked salmon, according to the Chicago Tribune. Vegetarian options are available.

Renowned pizza maker Gabriele Bonci founded the original shop in Rome in 2003. The brand expanded to Chicago in 2017 and has since launched locations in Milan and Dubai. In an Aug. 7 Tribune preview, Touhami said he's confident the brand is bringing something to Naperville that has never existed there, comparing the city to Milan and Dubai in terms of what residents can now access.

Founder Gabriele Bonci is expected to visit the Naperville shop later this fall for a book signing, though no date has been announced. The storefront at 22 E. Chicago Ave. will also house I Heart Gyro, a separate incoming tenant.

Bonci is now a listed member of the Downtown Naperville Alliance.
